2 medium/large onions, chopped
3 large stalks celery, chopped
2 bell pepper, chopped
(the above 3 are also known as “The Trinity of Cajun Cooking”)
1 lb smoked pork sausage, regular or spicy, cut in 1/8” slices (good brand – Savoys)
1 lb ground pork sausage, regular
4 tbsp margarine
2 cups long grain rice (Zatarains’s is the best)
2 cups beef stock
3 whole bay leaves
1 tsp salt
1 tsp white pepper
˝ tsp dry mustard
1 tsp cayenne pepper (optional)
1 tsp filet
˝ tsp cumin
˝ tsp black pepper
˝ thyme
1 ˝ tsp garlic
1 lb chopped or pulled Boston Butt

THE DAY BEFORE:
Cook the Boston Butt: Rub seasoning all over the butt. Add 1 ounce wine to bottom of the pan. Cook covered for 3 hours at 300 degrees. Cook an additional 15 with the lid off.
THE DAY OF:
Melt butter in large, cast iron, Dutch oven. Use high heat. Once butter is melted, add ground sausage. Cook until crumbled. Add smoke sausage and pulled pork. Add rice. Cook for about 3 minutes until rice soaks up the oil. Stir continually to avoid sticking.
Add veggies and beef stock. Add seasonings. Bring to boil. After mixture boils, lower heat to a simmer. Stir mixture about every 4 minutes to avoid sticking. Once most of water is gone and rice is beginning to stick it is ready. Takes about 30 to 40 minutes.
