1 cup oil
1 cup all purpose flour
3 quarts chicken broth
3 lbs chicken, cut up
1 lb sausage, cut up
2 lb shrimp
1 onion chopped
2 tbsp garlic
salt & pepper to taste
1 tbsp thyme
4 bay leaves

Directions:
Directions:
Make a roux with oil and flour. After roux is ready, add broth, onion and garlic. Bring to a boil and then simmer for about 30 minutes. Add chicken and sausage. Simmer for about 30 minutes and then add seasoning. Add your shrimp last and cook for about 5 minutes.

I married a wonderful southern man from Louisiana. This is his mother's recipe. I don't like seafood, so my hubby substitutes the shrimp for more chicken.
