2 cups cheddar, grated
1/2 cup butter, softened
1 cup flour
1/4 tsp cayenne pepper
Red pepper jelly

Directions:
Directions:
Cream together butter and cheese. Add flour and cayenne pepper. The dough looks to dry but just mix it together with your hands and if it is too soft put it in the fridge for a few minutes. Roll the dough into small balls and press into mini tart tins. Add a small amount of jelly in the middle.
Bake at 400 about 10 minutes. Cool on rack.
They freeze well and can be reheated for a few minutes before serving. Makes aproximately 24 to 30 tarts.
