Ingredients:  
8 slices of lean veal, pounded
3 tbsp flour
3 eggs, beaten
3 tbsp olive oil

Sauce:
2 tbsp butter
1 cup green onions, chopped
1 cup green pepper, diced
1 to 2 cups mushrooms, sliced
(opitional, artichoke hearts, sliced, 2 cups apx)
1/2 cup chicken broth
1/2 cup white wine
salt and pepper to taste

Directions:
To make the sauce: Heat butter in skillet, and saute onions, peppers and mushrooms. Add remaining ingredients and simmer cover. (steam saute)
In the other pan heat olive oil. Drege each veal slice in eggs and then flour. Saute couple of minutes each side Add and simmer briefly before serving
