2 T. olive oil
6 oz. thinly sliced, chopped pancetta
2 lbs. Brussels sprouts, trimmed & halved
3 T. balsamic vinegar
2 garlic cloves, chopped
1 T. chopped fresh thyme

Directions:
Directions:
Preheat oven to 450º F. Brush heavy cookie sheet with 1 T. oil. Place 1 T. oil in a large bowl. Mix in sprouts, pancetta and garlic. Sprinkle with salt and pepper. Spread on sheet and roast until tender and brown, stirring often, about 20 min. (Can make 3 hours ahead) Let stand at room temperature. Drizzle with vinegar and sprinkle with thyme. Stir to coat. Return to 450º F oven, roast 5 min. and serve.
