1 (2 lb.) acorn squash, halved and sliced 1/4" thick
2 Tbsp. olive oil
8 sprigs fresh thyme
Kosher salt
Freshly ground black pepper
1/4 cup grated Parmesan cheese

Directions:
Directions:
Heat the oven to 400º. On a rimmed baking sheet, toss the squash slices with the oil, thyme, 1/2 tsp. salt, and 1/4 tsp. pepper. Sprinkle with Parmesan. Roast until golden and tender, about 25 minutes.
