2 eggs, beaten
2 c flour
1 tbs water
1 tsp salt
64 oz chicken broth
1 lb chicken, cooked
6 servings mashed potatoes

Directions:
Directions:
Put flour and salt in a bowl. Make a well in center of the flour and put beaten eggs in the well. Add water, one teaspoon at a time, mixing thoroughly after each addition. (Add only enough water to form dough into a ball.)

Roll dough out as thin as possible, then sprinkle top with flour. Roll dough up like a jelly roll and slice very thin (1/2" strips) to make the noodles. Let noodles dry. Keep flour on the noodles to prevent sticking together.

Bring chicken broth to a rolling boil. Add the noodles, a few at a time. Add chicken, cook 20 minutes. Serve with mashed potatoes.

Recipe can be doubled and frozen.

Beef or turkey meat and broth can be substituted for chicken.
