2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 eggs
1/2 cup vegetable oil
1 1/4 cups sugar
1 tsp vanilla
1 1/4 cup mashed banana (3-4)
3/4 cup buttermilk or sour milk

Directions:
Directions:
In medium bowl, thoroughly mix flour, baking powder, baking soda and salt.
In second bowl lightly beat the eggs then add oil, sugar, vanilla and banana. Mix well. Add flour mixture alternately with buttermilk, beginning and ending with dry ingredients. Mix until batter is smooth.
Bake @ 350º for 40-5- mins, or until a toothpick comes out clean when inserted into the center of the cake. Place on a wire rack to cool.
Use a 13" x 9" pan or a bundt pan or angel food pan. Grease pan and spread batter evenly in the pan.

This is my family's favorite banana cake. It's used frequently in our house for birthdays with cream cheese icing on it. It's got the texture of a cake not a loaf or bread.
