Ingredients:  
1 Tbsp olive oil
1 yellow onion, chopped
2 cloves garlic, minced
3/4 c uncooked quinoa
1-1/2 c chicken broth
1 tsp cumin
1/4 tsp cayenne
1/2 tsp salt
1/2 tsp pepper
1 c frozen corn
1 can black beans, rinsed and drained
1/2 c chopped cilantro, optional

Directions:
Directions:
Saute onions 4-5 minutes, add garlic, cook 1 minute more. Add quinoa and broth, stir in spices. Bring to a boil. Cover, reduce heat and simmer for 20 minutes. Stir in frozen corn and black beans. Cover and let sit off heat until heated through. Stir in cilantro, serve warm or chilled.
