1-1/4 c chicken broth
1 c uncooked couscous
1 Tbsp butter
1/2 c olive oil
3 Tbsp lemon juice
1 tsp salt
1/2 tsp ground coriander
1/2 tsp dijon mustard
1 large garlic clove, minced
black pepper, to taste
1 c cooked diced chicken
1 large green onion, diced
1/2 c chopped celery
1 large granny smith apple, diced

Directions:
Directions:
In a saucepan, bring broth to a boil. Add couscous and butter. Bring to a boil again and cover. Remove from heat, let stand 5 minutes. Fluff with a fork and let cool. Combine olive oil, lemon juice, salt, coriander, mustard, garlic and pepper, mix well. Combine couscous, chicken, onions, apple and celery. Pour oil mixture over and serve.
