1 large onion chopped
1 C rice uncooked
2-10 oz pkg chopped broccoli
1 LB American Cheese
1 Can cream of mushroom soup
1 C milk
2 Sticks butter of margarine
1 sleeve of Ritz crackers

Directions:
Directions:
Cook broccoli and drain. Cook rice in a separate pan. In a large pan melt 1 stick of butter and saute onion until limp. Add hot rice and stir in cheese, mushroom soup and milk. Add broccoli and stir well. Put in a 9x 13 baking dish. Melt 1 stick of butter and mix with crumbled Ritz crackers. Sprinkle crackers over rice and bake at 350 for 45 min.

Not many people know this but my first professional cooking job was with Primo's Italian Restaurant working side by side with Anna Castle. Anna took me under her wings and taught me a lot of little tricks of the trade. To this day she still watches over me to make sure that I am OK. Her weekly check-in calls are mandatory and if I don't hear from her she and her husband Freddy will be sure to pop into Rig A' Tony's just to make sure everything is OK. Anna's broccoli and rice dish is so good that one day I used the left overs to make stuffed mushrooms and they were to die for. Iouza can be used as a side dish or roll them in egg and bread crumbs and fry them like arrancini's (Italian Rice Balls).
