1 pound ricotta cheese (drained)
2 T vanilla extract
1 C confectionery sugar
lemon zest
Chocolate shavings (optional)
Cannoli Shells

In medium mixing bowl mix together ricotta cheese, sugar, vanilla and lemon zest. Mix until smooth. Fill cannoli shells to order and decorate with chocolate shavings.

One of my favorite memories was driving to Duxbury, Ma to visit Uncle Buzz, Aunti Stella, Dana and Susan. While Uncle Buzz and my father were playing a hand game called, La Moda (the finger game), Dana was entertaining us on his organ, Stephen and Susan were hanging out listening to music, my beautiful, petite, gorgeous, aerobics instructor of an aunt was sitting in the corner preparing dinner. She came out onto the back deck with tears in her eyes crying that she was so embarrassed because she just ate the 6 cannolis that my mother had brought for dessert. My mother and I looked at Aunti Stella's beautiful waistline and said "Some woman have all the luck."
