2 lb. squid
2 c. buttermilk
2 c. all-purpose flour
2 tbsp. coarse salt
1 tsp. black pepper
1 tsp. white pepper
1/4 tsp. cayenne
Vegetable oil, preferably soy, for frying
Lemon wedges

Directions:
Clean the squid and slice bodies into 1/4 inch rings. Cut tentacles in half if they are large. Bring a saucepan of water to a boil. Add squid, stir just until pieces separate, and immediately drain and shock with cold water. Drain well. Combine squid and buttermilk and set aside.
Heat oil to 375º. Combine flour and seasonings. A handful at a time, drain squid pieces and toss them in seasoned flour. Shake in a strainer to remove excess flour. Deep fry until golden, less than a minute if oil is properly heated. Remove to a platter lined with paper towels to drain. Keep warm in oven on low setting while you fry the remaining squid. Do not cover. Serve as soon as possible with lemon wedges.

Tips: The secret to fry squid in order to achieve a nice crisp crust and tender moist innards is; blanching the squid for a few seconds before breading it.
