3 tbsp butter
leeks 2 to 3 depending in store
6 -8 potatoes, thinely sliced
1 to 2 boxes of broth can be chicken is best enough to cover the potatoes
1 cup heavy cream
1 green onion sliced
1 medium onion chopped and diced or sliced

Directions:
Directions:
Melt butter. Add the onions, till not quite carmalized. Saute the leeks till done. Add potatoes and cover with broth to barely cover the potatoes till tender. Using a potato masher, mash till how you like and stir.
Add the 1 cup of heavy cream. Continue cooking and to stir. Add salt and pepper.
