6 large potatoes
1 onion
salt and pepper
2 eggs
1/4 c flour

Directions:
Directions:
Peel and finely grate the potatoes. A food processor works great for this. Add finely chopped onion, eggs, flour, salt and pepper. Mix thoroughly.

Drop a small ladel full into a heated pan with oil in it. Fry until golden brown.

Serve with jam, apple sauce or sour cream.

Nellie used to do it by hand, then discovered the food processor. She says that Uncle Herman and her used to make many many potato pancakes out on the farm, especially when Gramma was away. She also says that Uncle Herman loved finely grated carrots, which brings me to another recipe of my childhood. Creamed carrots with cinnamon.
