Red, green, and/or yellow pepper
Sweet onions--
Favorite spices like; salt, pepper, lemon and pepper seasoning, parsley, garlic, ginger, olive oil, seasoned salt, or red pepper flakes.

Use heavy duty foil or a double layer of a lighter weight foil or a grill pan.

Wash and cut or slice veggies to appropriate size
Put veggies in a bowl and spray with non-stick spray
Toss together with your seasoning of choice.
Mix up your veggies so that they are evenly coated in seasonings
Place on foil evenly spread with only one layer
Spray or brush oil or butter
Place veggies to the side of the grill--not over direct heat. grill for approximately 15 minutes, until tender and lightly browned flipping the pouch over at a midpoint.

I started with potatoes and butter and then tried all kinds of combos depending on what kind of meat I was cooking. When using summer veggies, I like to add fresh pineapple chunks and marinade with whatever sounds good. The term "en papillote" means food cooked while wrapped in foil or parchment. The concentrated heat from the wrapping shortens the cooking time and clean up is simple, making grilled vegetables in foil a real winner.
