1 C. all-purpose flour
1 C. cornmeal
3 TB. sugar
1/2 tsp. salt
1/2 tsp. baking soda
1 egg
1 C. (8oz.) reduced-fat sour cream
1/4 C. unsweetened applesauce
1/4 C. butter, melted
1 can (15 1/4 oz.) whole kernal corn, undrained
1 can (15 3/4 oz.) cream-style corn

Directions:

In a large bowl, combine with first five ingredients. In a small bowl, whisk the egg, sour cream, applesauce and butter. Stir in corn. Stir into dry ingredients just until moistened. Transfer to a 13-in x 9-in. baking dish coated with cooking spray.

Bake at 350 º for 30-35 minutes or until a toothpick inserted near the center comes out clean. Serve warm.

I LOVED the corn casserole that was made by someone at St. Helena's when I was growing up...I found this recipe and glad to see it a little "lighter"!
