3 tbsp. butter
1 c. brown sugar
3/4 c. chopped pecans
sliced apricots, peaches, or pineapple
1 1/2 c. sugar
1 1/2 c. flour
1 tbsp. baking powder
pinch salt
3 eggs
1/2 c. boiling water

Directions:
Directions:
Melt butter in 10 inch skillet. Sprinkle brown sugar over butter. Next layer nuts over brown sugar. Place a layer of your fruit of choice next. Sift flour, sugar, salt, and baking powder. Beat egg yolks and add boiling water. Beat into the flour mixture. Mix well. Beat egg whites until stiff. Fold into cake batter. Pour over the ingredients in the skillet. Bake at 350º for about 45 minutes or until toothpick comes out clean.
