4 med - lrg ripe cucumbers
1/3 C. salt
4.5 C sugar
6 C white vinegar
1 T salt
3 T whole allspice
3 sticks cinnamon
3 T mustard seed

Peel cukes
Cut in half lengthwise
Scrape out seeds and loose pulp
Sprinkle salt over cukes and layer
Let stand overnight
Drain cukes and rinse well with cold water
Drain again
Combine sugar vinegar, spices and remaining salt
Place on cheesecloth
tie to make a bag
Bring to a boil and boil 5 min
Add drained cukes and boil until cukes are transparent and barely tender (about 5 min) turning gently to allow for even heating
Place cukes in hot sterilized pint jars
Bring pickle mixture to a boil
Remove spice bag and pour mixture over cukes till completely covered
Seal immediately
