Ingredients: 1 c butter or oleo 1 c sugar 4 4 eggs 1 c buttermilk 1 c chopped raisins 1 c chopped nuts 3 c flour 1/2 tsp salt 1 tsp cinnamon 1 tsp allspice 1 tsp cloves 1 tsp nutmeg 1 tsp baking soda
Filling
2 boxes coconut 2 1/2 c sugar 2 tbsp flour 2 lemons, grated (rind and juice) 1 1/2 c hot water

Directions: Cream butter and sugar together. Add eggs, 1 at a time, beating well after each addition. Stir dry ingredients together and combine 2 mixtures. Flour raisins and nuts. Add to first mixture. Pour into 3 9-inch layer pans. Bake in 375 º oven for 35 mins. Put together with Japanese Fruit Cake Filling.
Filling
Combine all ingredients and cook until thick. Cool slightly and put between layers and on top layer. I add nuts and raisins and whatever else I take a notion to. |

Notes: This recipe is over 70 years old. My mother use to make this every year for Thanksgiving and for Christmas. She made this, a chocolate cake and a coconut cake before Thanksgiving every year and we had half of each for Thanksgiving and the other half for Christmas.
