2 c plain flour
2 c sugar
2 tsp cinnamon
2 tsp soda
1 tsp salt
1 c vegetable oil
4 whole eggs
3 c grated carrots


Icing


1 (8oz) pkg cream cheese
1/2 stick butter
1 box powdered sugar, sifted
1 c nuts, chopped
1 tsp vanilla
2 tbsp milk or cream

Directions:
Cake: Mix dry ingredients. Add oil and stir well. Add eggs, 1 at a time and mix. Add carrots. Stir until mixed. Put in three pans. Bake for 35 min. at 359º. Cool.
Icing: Soften cream cheese and butter. Add remaining ingredients. Mix. Ice cooled cake,
