1/4 c. sugar
1/4 tsp. paprika
1/8 tsp. ground red pepper
1/4 c. fresh lemon juice
2 tsp. olive oil, divided
1 1/2 lb. sea scallops
kosher salt
black pepper
1 clove garlic, mined
10 oz. baby spinach
1/4 c. pine nuts, toasted

Directions:
Directions:
Bring first 4 ingredients to a boil in a saucepan. Cook 4 minutes or until thickened. Set aside.
In a large skillet, add 1 tsp. olive oil and swirl to coat. Pat scallops dry and season with s/p. Add scallops to pan and cook 2 minutes on each side. Remove from heat and set aside.
Add remaining 1 tsp. of oil to pan and saute garlic for 30 seconds. Add half of the spinach and, stirring constantly, cook for 1 minute. Add remaining spinach and 1/8 tsp. salt and cook an additional 2 minutes until wilted.
Place spinach on plates and top with scallops. Drizzle paprika syrup over scallops and sprinkle with pine nuts.

This is one of my favorite sauces for any kind of fish. Quick and easy and you always have the ingredients on hand to whip it up on short notice. Adds a great flavor.
