4 cups heavy cream
3-4 oz. crumbled Gorgonzola
3 T. freshly grated Parmesan cheese
3/4 tsp. kosher salt
3/4 tsp. black pepper
3 T. fresh minced parsley

Directions:
Directions:
Bring the heavy cream to a full boil in a saucepan over medium-high heat, then continue to boil rapidly for 45-50 minutes, stirring occasionally until thickened.
Off the heat, add the Gorgonzola, Parmesan, s/p, and parsley. Whisk rapidly until cheese melts. Serve warm.

This is a great addition to any kind of steak. I would stick to beef though, not chicken, it can really hold up to the richness of the sauce. If you like the taste of blue cheese, this sauce is for you!!
