1 pkg. beef flavored rice
1 envelope Taco seasoning
1 can crushed tomatoes
1 can Veg- All mixed vegetables (drained)
1/2 cup chopped green onions
1/4 cup chopped green peppers

Directions:
Directions:
Cook rice according to package directions (use fat free, low calorie or no butter). Add the can of drained vegetables. Heat through and set aside. Spray a skillet with fat-free cooking spray. Saute' onions and green peppers until tender. Add the tomatoes and heat through. Add taco seasoning and stir to mix. Slowly fold rice mixture into tomato mixture. Heat through. Serve with fat-free refried beans, fat -free sour cream, salsa and tortilla chips.
