1 head of fresh broccoli
1 48 oz. can OR homemade chicken broth
6 tbsp. butter
6 tbsp. flour
1 c. milk
1 c. half and half
Velveeta or cheddar cheese, to taste
salt and pepper, to taste

Directions:
Directions:
Wash and cut broccoli into small pieces. Cook in chicken broth until tender. Make a thick, white sauce by melting butter and adding flour to make a thick paste. A little at a time, add milk and cream until smooth. When broccoli is tender, blend into very small pieces. Pour blended mixture into white sauce and season to taste. Serve hot with croutons.
