1 egg
4 tablespoons mayonnaise
1 1/2 teaspoons Worcestershire sauce
2 teaspoons Old Bay seasoning
1 tablespoon grated onion
1/2 teaspoon yellow mustard
2 tablespoons finely chopped parsley
1 lb. lump crab meat
3/4 cup coarsely crushed Ritz crackers
salt and pepper to taste

Vegetable oil for deep frying

Pick over crab meat to remove shells and cartilage.

In large bowl, slightly whisk egg. Whisk in mayo, worcestershire sauce, old bay, mustard and parsley. Carefully fold in crab meat and finally crackers.

Heat oil for deep frying to 350º.

Form into 8 level crab cakes about the size of hockey pucks. Slice into hot oil and deep fry about 3 minutes until golden brown.

OR
Pan fry in clarified butter over medium - high heat turning once, for about 5 minutes total.

Season to taste with salt and pepper. Serve with coleslaw and french fries.
