4 fresh flounders, cleaned and dressed
1/2 cup chopped celery
1/4 cup chopped green pepper
1/4 cup chopped onion
2 tablespoons butter
2 cups cornbread stuffing mix
1 cup shrimp, cooked and chopped
1/4 cup salad dressing
1 tablespoon snipped fresh parsley
Dash of cayenne
2 tablespoons butter or margarine

Directions:
Place fish on cutting board dark side up. Using a sharp knife, make a lengthwise cut in the center of each fish on the spinal column, from behind the head to the rear of the tail. Next, make pocket i.e. filet, by cutting from the spine working outward just on the top of the tail bone. Repeat on other side of spine and lightly salt pockets. Sauté all of your vegetables in margarine then add stuffing mix, salad dressing, cooked shrimp and seasonings. Stuff each individual flounder. Bake at 350° until done.
