Ingredients:  
1 stick butter
2 stalks finely chopped celery
1 bunch finely chopped green onions
1 bunch finely chopped parsley
1/4 cup or less of flour
1 quart fresh oysters and juice
Salt and pepper to taste
1/2 cup heavy cream
1 pie or pastry shell with top and bottom

Directions:
Directions:
In an iron skillet, melt one stick of butter. Sauté celery, green onions and parsley. Then add about a quarter cup flour and stir well. Next, add oysters with the juice of oysters, salt and pepper to taste. Last add a half cup heavy cream. Pour into pastry shell and bake at 350º until golden brown.

It wasn't Christmas if Azzie didn't make oyster pie. My uncle would get these wonderful pastry shells in New Orleans and she would fill them with that wonderful oyster filling.
