1/2 c. butter (no substitutes) softened
1 c. Jif peanut butter (reduced-fat or generic brands of peanut butter are not recommended)
1 tsp. vanilla extract
2 c. confectioners' sugar
2 c. (12 oz.) semisweet chocolate chips
1/4 c. shortening

Directions:
Directions:
In a small mixing bowl, cream the butter, peanut butter and vanilla; mix well. Gradually beat in confectioners' sugar. Cover and refrigerate for at least 1 hour. With a rounded tablespoon of peanut butter mixture form into an egg shape. In a microwave, melt chocolate chips and shortening; stir until smooth. Dip peanut butter eggs in chocolate; place on waxed paper.
Refrigerate for at least 1 hour. Yield: about 2 dozen.
