7 lbs watermelon rind
7 lbs sugar
1 qt white vinegar
1/2 tsp oil of clove (drug store only)
1/2 tsp oil of Cinnamon (drug store)
2 tsp salt
1 tsp alum

Directions:
Directions:
Cut green and pink away from rind. Cut into cubes. Cook in 2 tsp alt and 1 tsp alum, until you can see the rind look clear. To make syrup, boil sugar, vinegar, oil of clove and oil of cinnamon. Pour over drained rind. Let stand 24 hours. Reheat the syrup, pour back over the rind. Do this for 4 days. on the 4th day, pack pickles into jars with hot syrup. Place in canner for 1 hour. Remove and lids will seal.
