2 boxes apricot Jello
2 cups hot water
2 cups cold water
1 (2 oz.) can crushed pineapple, drained, save juice
2-4 bananas, sliced
1 cup mini marshmallows

topping:
1/2 cup pineapple juice retained
1/2 cup sugar
1 egg, slightly beaten
1 tbsp. flour or cornstarch
1 small pkg. cream cheese
1 pkg. dream whip
grated cheese

Directions:

Mix Jello, hot water, and cold water together. Let chill slightly. Add crushed pineapple, drained (save 1/2 cup of the juice). Then add marshmallows and bananas. When firm, add topping. For topping: Mix flour and sugar; add juice and egg. Cook until thickens, stirring constantly. Cool. Blend one small pkg. cream cheese. When cold, fold in one pkg. dream whip (omit vanilla on box of dream whip). then sprinkle with coconut or graded cheese. Chill until set.

Mom's recipe says she prefers cheese to coconut. I have the hand written recipe that she gave me years ago.

Memories: Some of our most prized possessions are the quilts Mom made and the things she crocheted for us. I learned to quilt and sew, but I never could get the hang of crocheting. Peggy learned all her recipes and canning. Mom taught my daughter Karen to crochet, and Karen now makes Mom crocheted things, like dolls and jewelry. Mom always smiles when we remind her where Karen learned to crochet. It pleases her that her granddaughter learned from her.
