1 baked potato per person
1 lg onion, diced
1 Tbsp canola oil
4 cloves garlic, minced
2 tsp chili powder
2 tsp cumin
1/2 tsp cayenne pepper
28 oz. can crushed tomatoes
3 medium tomatoes, chopped
15 oz can kidney beans
15 oz can navy bean
15 oz can black beans
1 cups water
1/2 tsp ground pepper
Toppings: cheddar & sour cream

Puncture potatoes with a fork 4-5 times. Bake potatoes in 350º oven for about a hour. Alternately, microwave them for 5 minutes, and then in two minute increments until soft through the middle.

Heat oil in a Dutch oven over medium heat. Add onion and garlic and reduce heat to medium-low and cook, stirring often, until very soft and just beginning to brown, 5 to 7 minutes. Add chili powder, cumin and cayenne and cook, stirring constantly, until fragrant, 30 seconds to 1 minute.

Stir in canned and fresh tomatoes, kidney, navy and black beans, water and pepper. Increase heat to high and bring to a boil, stirring often. Reduce heat to a simmer and cook, stirring occasionally, until the chili has reduced slightly, 10 to 15 minutes.

Serve chili over baked potatoes and top with sour cream and shredded cheddar cheese.

Variations: Sometimes we add a pound of browned ground beef to the recipe. Also, we like to use this chili for chili-cheese fries. Either way it's awfully good!

We ate this meal for dinner all the time when I was pregnant with Ginny- and usually followed it up with ice cream for dessert, because the combo of the cold and sugar always made Ginny kick like crazy!
