2 1/2 c sifted flour
1 1/2 c sugar
1 Tbsp baking powder
1 tsp salt
1/2 c Wesson oil
6 eggs, separated
1/4 c cold water
2 tsp lemon juice
1 tsp lemon rind
1/2 tsp cream of tarter

LEMON FLUFF FROSTING
1/2 c butter
dash salt
4 c sifted confectioner sugar
3 Tbsp lemon juice
2 tsp lemon rind

Directions:
Directions:
Sift flour, sugar, powder, & salt together in bowl. Make a well & add in order the oil, egg yolks, water, lemon juice, & rind. Beat with spoon until smooth. Add cream of tarter to egg whites & beat until very very stiff. Pour egg yolk mixture gradually over the whipped egg whites, carefully folding with a rubber scraper just until blended. Don't stir!. Pour into tube pan. Bake at 325º for 70 minutes or until top springs back. Cool upside down on bottle of beer!

LEMON FLUFF FROSTING:
Cream butter. Add salt. Add part of sugar & cream well. Add remaining sugar alternately with lemon juice, cream until light & fluffy. Add lemon rind & mix until thoroughly blended.
