1/2 cup green bell pepper, chopped
1/2 cup green onions, chopped
1/2 cup celery, chopped
Butter for sauteing
1/2 - 2/3 can chicken broth
Ham, sliced and cubed
1 can Golden Cream of Mushroom soup
1/2 can milk (or 4 tbsp. cream)
1/2 cup parsley, chopped
Cooked rice

Directions:
Directions:
Saute the bell pepper, onions and celery in butter. Add the chicken broth, ham, mushroom soup, milk (or cream), and parsley and mix together. Simmer 20-25 minutes. Serve over rice.

I first had this at an old plantation near Natchez, Louisiana which had opened its doors to serve luncheon to "ordinary people" on a tour of the Plantation Country. I was so over-joyed at the whole beauty of the Southern living environment! I would have eaten mud pies right off the plantation!
