3 tbsp vegetable oil
1 1/2 pds boneless skinless chicken breast
kosher salt and pepper
2 teaspoons cumin
2 teaspoons garlic powder
1 teaspoon ground chipotle pepper
1 red onion, diced
2 garlic cloves, minced
1 cup frozen corn
1 small can green chiles
4 chipotle peppers in adobe (1/2 can)
1 can stewed tomatoes, drained
1/2 tea spoon flour

1 1/2 cup enchilada sauce
1 cup Monterey jack cheese

Directions:
Directions:
1. Saute chicken in saute pan with vegetable oil for 5-10 mins until cooked. Season with salt and pepper, cumin, garlic powder, and ground chipotle. Remove and cool.
2. In the same pan add the onions, garlic, and corn. Cook at medium heat for 2 mins. Add the green chilies, flour, and stewed tomato. Adjust with salt and pepper if needed after tasting. Cool.
3. Preheat oven to 350. Shred chicken or dice very small. Mix chicken with veggies.
4. Coat baking dish with a little enchilada sauce.
5. Add 2-3 tbsp of enchilada filling to tortilla, and a sprinkle of cheese. Roll up like a cigar and line the baking dish with enchiladas. Top them with remaining enchilada sauce and cheese.
6. Bake for 15-20 mins until cheese is melted.

We enjoy having green onions, cilantro, sour cream, avocado, and salsa to top ours with. Is also great with rice and homemade bean dip. Enjoy!
