6-8 pds of pork or chicken - any cuts will do
1/3 cup sugar
1/4 cup kosher salt
2 cups soy sauce
1 gallon water
1 cup white wine or beer
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp black pepper
1/2 tsp hot sauce

Directions:
Directions:
1. Mix brine and pour over the protein. 1 hour brine time per pound of meat.
2. Remove protein from brine and smoke until internal temp of 145 degrees.
