10 large flour tortillas
Carton of sour cream
1 pound boneless chicken breasts
1 1.27 ounce packet fajita seasoning
1 tablespoon oil
1 green bell pepper, diced
1 red bell pepper, diced
1 small onion, diced
8 ounces shredded cheddar cheese
8 ounces shredded Monterrey jack cheese

Cut chicken into small pieces. Combine with fajita seasoning and mix thoroughly. Heat oil in large skillet. Add chicken and cook until no longer pink. Stir in peppers and onions. Slowly cook for 10 minutes. Layer half of each tortilla with cheddar cheese and chicken/vegetable mixture. Top with Monterrey jack cheese and fold in half. Press edges together lightly. Lightly spray a skillet with cooking spray and heat to medium heat. Lightly brown each quesadilla for 2-3 minutes per side until cheese is melted. Cut into three wedges and serve with sour cream.
