2 boneless chicken breasts (about 12 ounces)
2 cloves garlic
1/4 cup red onion, chopped
1/4 cup ripe olives, chopped
1/4 cup red bell pepper, chopped
1/4 cup grated Parmesan cheese
4 cups thinly sliced Romaine lettuce
3/4 cup seasoned croutons
1/2 cup Caesar dressing
6 8-inch flour tortillas

Directions:
Directions:
Saute chicken breasts in olive oil for 25 minutes. Remove from pan. Cool and cut into thin strips. Place chicken in bowl and add onions, olives, peppers, cheese and croutons. Add dressing and toss to coat. Place 3/4 cup of mixture on each tortilla. Roll up tightly, jelly roll fashion. Wrap each tortilla in plastic wrap and refrigerate seam side down for 30 minutes. Can be refrigerated for up to 3 hours.
