1 package Uncle Ben's wild long-grain rice
2 packages frozen mixed vegetables
1 can chicken broth
1 small can mushrooms
1 stick butter or margarine
4 tbsp. chopped onion and celery
salt and pepper to taste
dash or two of hot sauce

Directions:
Directions:
Saute onions and celery in butter. Cook and drain frozen vegetables.Cook rice in chicken broth. Mix all ingredients and place in large casserole dish. Bake at 350 degrees for 30-40 minutes.

This makes a colorful, tasty vegetable casserole. The recipe came from one of my Dad's old friends, Elbert Luna. We like to serve this for large group dinners, but I make it often just for the family. Leftovers reheat well in the microwave.
