2 T. olive oil
8 boneless, skinless chicken breasts, cubed
Brown for 10 minutes.

Chop up:
1 large onion
5 ribs of celery

Add:
2 . olive oil
3 cans of chicken broth
3 cans of white beans
2 cans of white beans, mashed
2 4.5 oz. cans green chilies
1/2 tsp. celery salt
1 tsp. oregano
1 tsp. cumin
1/2 tsp. chili powder
1/2 tsp. white pepper
1/2 tsp. cayenne pepper
1 tsp. salt
1 package country gravy mix

Brown the cubed chicken breasts in olive oil. Mix all ingredients in large soup pot. Simmer on low till warm and ready.

I only use one can of chopped green chilies unless I know everyone likes it hot. You may want to garnish a bowl of this with sour cream, extra chilies to taste, cheese, or bacon bits.
