1 can (28 oz.) italian plum tomatoes
1/4 c. extra virgin olive oil
2 tbsp. finely chopped garlic
1/4 tsp. red pepper flakes
1/3 c. vodka
Salt & freshly ground black pepper
1/3 c. heavy cream
Fresh basil leaves, torn, for garnish
Grated parmesan cheese

Directions:
Directions:
Pour tomatoes and their liquid into food processor and process until smooth. Set aside.
In large skillet, heat olive oil until hot but not smoking. Add garlic and pepper flakes to pan and cook until garlic is golden, about 1 minute. Add tomatoes and vodka. Bring to boiling, season with salt and pepper and reduce heat to medium-low. Simmer, uncovered about 8 minutes and add the cream. Simmer 3 to 4 minutes longer and season with salt and pepper.
Serve over pasta. Sprinkle with basil leaves and parmesan cheese.
