New Potatoes (or other small, round potatoes)
Olive Oil
Kosher Salt
Black Pepper
Rosemary or Thyme (or other desired herbs)

Directions:
Bring a pot of salted water to boil. Add in as many potatoes as you wish to make and boil until fork-tender.
On a sheet pan (I usually line with foil for easy cleanup), generously drizzle with olive oil and sprinkle a little Kosher salt over it. Place tender potatoes on the cookie sheet, leaving plenty of room between potatoes.
With a potato masher, gently press down each potato until it slightly mashes, then rotate the masher about 90 degrees and mash again. Brush tops of each crushed potato generously with more olive oil.
Sprinkle potatoes with Kosher salt, fresh ground pepper, and rosemary or thyme (or whatever fresh herbs you have on hand or desire.)
Bake at 450º for 20-25 minutes until golden brown.

These are yummy and SO easy & simple. Just leave yourself enough time to fully prepare! (Note: I find the 'crispier' the skins are, the better!)
