1 c. hot peppers, diced (jalapeño)
3 c. red or green bell peppers, diced
10 c. tomatoes, diced, peelings off
3 1/2 c. onions, diced
3 c. celery
8 sections garlic, diced or mashed (1/8 tsp. minced garlic per 1 section)
1 1/2 c. vinegar
2 tsp. oregano
1 T. chili powder
1 T. cumin
6 tsp. salt
18 oz. tomato paste

Simmer all ingredients except tomato paste for 1 hour. Add paste and heat a little longer. Place in jars and seal- hot water bath 15 min. (Or heat oven to 300º. Put jars on trays and leave in oven 15 min. Seals either in the oven or when you take them out.
