Chicken Pot Pie Recipe

3 boneless, skinless chicken breasts
1 can chicken broth
3 potatoes
1 yellow onion
3 stalks celery
2 T. vegetable oil
2 T. flour
2 c. frozen mixed vegetables
salt and pepper to taste
1/4 tsp. garlic powder
1- 9 in. prepared pie crust, thawed

Place chicken breasts in a pot with enough water just to cover the chicken. Add some salt, pepper, and garlic powder. Bring to a boil, turn off heat and cover. Let cool in the pot. Preheat oven to 350º. Cut potatoes into bite size pieces and boil until almost fork tender. Drain and set aside. Cut onion and celery into bite size pieces. In a large heavy skillet over medium heat, saute onion and celery in oil for 5-8 min. Add the frozen vegetables and cook another 5 min. Add flour and cook about 30 seconds. Add chicken broth and bring to a boil. After it has become thick, add potatoes. Remove chicken from pot and cut into bite-size pieces and add to vegetable mixture. Add salt and pepper to taste. Pour mixture into pie crust and cover with pie shell; crimp edges. Bake at 350º for 45 min or until pie shell is cooked and golden brown.
