1 cup sugar
2 Tablespoons flour
2 eggs
1/4 c vinegar
2 1/2 heaping Tablespoons pickle relish
1/2 cup mayonnaise

6 potatoes, boiled in skins, peeled and diced
3 hard boiled eggs, diced
1 medium onion, minced
1 1/2 tsp. salt
3/4 tsp. celery seed

In saucepan, mix sugar and flour. Add eggs and mix. Add vinegar and mix well. Cook, stirring constantly, over medium-high heat. Turn down to low heat after it starts to boil. continue stirring until it thickens. Remove from heat; add relish and mayo9naise. Mix well. Add to potato mixture.

Add more sugar or less vinegar if the vinegar taste is too strong. I often add more mayonnaise that the recipe calls for. I make this the day before I intend to serve it so the flavors will blend.

I wrote this down as Lucille was preparing it. I don't think she had a recipe.
