2 packages (8 ounces) imitation crabmeat, flaked
2 celery ribs, chopped
1/4 cup green onions, chopped
1/4 cup shredded cheddar cheese
3 tablespoon mayonnaise
3 tablespoons plain yogurt
8 croissants, split
lettuce leaves
tomato slices

1. In a bowl, combine the crab, celery, onions and cheese.
2. Combine the mayonnaise and yogurt until blended; add to the crab mixture and toss to coat.
3. Line croissants with lettuce; top with crab salad and tomato slices.

I have made this crab salad using all mayonnaise and omitted the yogurt. I like to add season salt to the crab mixture. They are delicious.
