1 squash (long neck about 2 lbs.)
Salt and pepper
2T olive oil
1/4 stick butter
3 T butter

Directions:
Directions:
Heat oven to 400º. In a bowl combine oil,salt and pepper. Add the squash and mix to coat all over. Pour into a baking dish or sheet pan so that it is a single layer. Roast for 20 min. until almost done. Remove and let cool. When cool place in a heat proof serving dish. Top with dollops of butter and sprinkle with brown sugar. Heat before serving so the butter and sugar will carmelize, Serve warm.
