3 tablespoons oil
2 lbs. frozen shredded hash brown potatoes
1 onion, chopped
2 cups cubed ham
10 eggs, beaten
1/2 cup milk
Salt & Pepper to taste
2 cups shredded sharp/cheddar cheese

Directions:
Directions:
Heat oil in large skillet, add hash browns and onion , cooking until hash browns begin to brown. Pam spray a 9 x 13 pan. spread potato / onion mixture into pan cover with ham. Pour beaten eggs mixed with milk over top and gently stir to coat . Sprinkle with cheese, cover with foil and refrigerate over night .

Remove foil then bake at 375º for 35 minutes.
