2 lb. carrots, thinly sliced
1/2 c. butter
1/4 c. minced onion
1/2 c. flour
2 c. milk
1 tsp. salt
1/4 tsp. dry mustard
1/4 tsp. celery salt
2 c. shredded cheddar cheese
1 c. soft breadcrumbs
2 tbsp. butter

Directions:
Cook carrots 12 - 15 minutes, drain and set aside. Melt 1/4 cup butter over low heat. Add onion until tender. Add flour, dry mustard. Stir until smooth. Cook 1 minute, stir constantly. Gradually add milk. Cook over medium heat, stir constantly until thickened and bubbling. Add salt, celery salt, and cheese. Stir until cheese melts. Combine carrots and sauce in lightly greased 2 quart casserole. Combine 2 tablespoons melted butter and bread crumbs. Sprinkle over casserole. Bake at 350º for 25 minutes.
