1 1/2 lbs. ground beef
1 1/2 cups fresh bread crumbs
1/4 cup finely minced shallot or onion
1 tsp. sea salt
1/2 tsp. freshly ground black pepper
2 tbl. whole-grain mustard
1 large egg
12 ounces orange marmalade
1/2 cup chili sauce
1/4 cup bourbon
1/4 tsp. Tabasco, Crystal or Texas Pete

Preheat the oven to 400º. In a large bowl, combine the ground beef, bread crumbs, onion, salt, pepper, mustard and egg. Mix well. Use your hands to gently form 1 1/4-inch meatballs and place in an ungreased baking pan; bake for 20 minutes. In a large saucepan over low heat, stir together the marmalade, chili sauce, bourbon and Tabasco and simmer for 15 minutes, stirring frequently. Add the meatballs to the sauce and stir to coat. Garnish with sprigs of mint. Makes about 40 meatballs.

I love these meatballs as a main course, with rice or potatoes, but they also make a popular appetizer when served in a chafing dish at a party.
